So last night we had a dish i've been working on a for a few times now, it's coming along each time, and i'm thinking a little less salt next time.  I'm not sure of what to call this, but it's a scrambled eggs dish i've made up and it tastes great.


The basic ingredients are eggs, good quality wraps, baby spinach leaves, basil, salt, pepper, olive oil, and some paprika.


The wraps are ripped into rough squares, heated up with the oil, salt and herbs to make them nice and crispy.


 These are put aside while you make a nice mix of scrambled eggs.  

Just before they are ready, add the spinach leaves



Then mix in your put-aside ripped-up wraps. 


And done!
  


One simple, healthy, tasty scrambled eggs in one dish, without the need for any bread, toast or anything else.   And it's better than you might think.  Hubby was surprisingly impressed when he first had it (surprising to him and to me), as usually when I say how about eggs for dinner he sticks his nose up and isn't that impressed.  But eggs are so healthy I think!


And dessert, well that was a cup of tea, blanket and couch.  Bliss...
